One-pan tomato butter beans

Creamy beans simmered in a rich tomato sauce with garlic and greens.

  • 1 tbspolive oil
  • 2 cloves, slicedgarlic
  • 1 tspsmoked paprika
  • 400 g canchopped tomatoes
  • 2 × 400 g cans, drainedbutter beans
  • 2 handfulsbaby spinach
  • 2 slicescrusty bread, to serve

LET’S GET COOKING

Method

  1. Warm the oil in a large frying pan over medium heat. Add the garlic and paprika and stir for 30 seconds, until fragrant.
  2. Tip in the tomatoes and beans. Season with salt and pepper, bring to a gentle simmer and cook for 10 minutes, stirring occasionally.
  3. Fold in the spinach and cook for 1–2 minutes until just wilted. Taste and adjust the seasoning.
  4. Serve hot with crusty bread for scooping up the sauce.
