Fridge-door fried rice

A flexible, satisfying way to turn cold rice and odds and ends into dinner.

WHAT YOU’LL NEED

Ingredients

  • 3 cups, coldcooked rice
  • 2eggs
  • 1 tbspneutral oil
  • 1 cup, dicedmixed vegetables
  • 2spring onions
  • 1 tbspsoy sauce
  • 1 tspsesame oil (optional)

LET’S GET COOKING

Method

  1. Break up any clumps in the cold rice with your fingers or a fork. Beat the eggs in a small bowl.
  2. Heat half the oil in a wok or large frying pan over high heat. Scramble the eggs until just set, then transfer to a plate.
  3. Add the rest of the oil and the vegetables. Stir-fry for 2–3 minutes until hot and just tender.
  4. Add the rice and soy sauce. Toss over high heat until steaming hot throughout. Return the egg to the pan, stir through the spring onions and sesame oil, and serve.
